1. Rice and Stew (Cook Once, Eat Multiple Times)

Plain white rice paired with a well-prepared tomato stew remains one of the most economical meal-prep options. Cooking a pot of stew with minimal protein — such as fish or eggs — allows you to eat for several days while changing sides like boiled plantain or yam to avoid boredom.

2. Beans and Corn (Adalu)

Adalu is filling, nutritious and inexpensive. Beans provide protein while corn adds bulk, making it ideal for meal prep. A large pot can last several days and can be eaten on its own or with bread.

3. Noodles with Vegetables and Eggs
